The unwritten, but generally accepted rule accross the entertainment industry is:-
Christmas Eve, Boxing Day, NY Day and bank holiday Mondays - twice your normal fee
NYE - three times your normal fee
Valentines, bank holiday Saturdays etc - one and a half times your normal fee

It certainly is unwritten. I have quoted less than double for NYE 4 times and each time they booked someone cheaper.
Never mind, I could stay home and watch Jules Hollands Hootananny.

For the record I have quoted £400 to many and been rejected.

We haven't got round to discussing price yet....I feel compelled not to stitch them because we work together!!!

Why would charging a premium rate for a premium date be "stitching them up"?

This year is the exception for me, I've never heard of that unwritten rule either. Any other time I've quoted for NYE it's always been at double rate.
