The all days are a long day and sometimes a lot of prep, but I can see why people just do them. Now my assistant is busy (he has a girlfriend), i would like to just MC the day, first dance and get someone else to do the tech and evening part as I have recently found myself lagging a bit come 10pm (especially as I have 2 babies). A local DJ to me only does one all day a week as a rule and I think this makes sense, but you really have to charge for that luxury and add in those extra special time consuming details.

I don't agree with that - on paper sounds good, but if just 1 of those bookings does not materialise you are snookered - plus 2 x £1200 bookings a month would not be enough income for me. By taking a slightly higher quantity, if bookings are a little slow it does not affect you.
A lot depends if you solely rely on your DJ income or have partners wage, redundancy, pension etc to fall back on
