So, this year, everyone's over to us on Christmas day and I'm just sorting menus and recipes out at the moment.

Anyone got anything interesting they do for Xmas day lunch or anything with a twist?

Haha, I've actually never tried a deep fried Mars bar, the very idea sickens me.. :(

Once boiled, brown off your sprouts for about a minute in a little very hot butter - YUM! :cool:

Even better if you chuck a few grilled chestnuts in there too - DOUBLE YUM! :)

Oh, and goose fat for the roasties

Doing the sprouts with some lardons or pancetta this year.

I know all the top chefs use goose fat, so will have to give it a try. I noticed them selling plastic tubs of it in Morrisons the other day.

Draw the curtains, thus putting the room into darkness. A big blast on the smoke machine, Carmina Burana at a very serious volume, and the Turkey makes it's entrance, illuminated by two moving heads.

I know all the top chefs use goose fat, so will have to give it a try. I noticed them selling plastic tubs of it in Morrisons the other day.

You'll need one of those little tubs/jars for about every 3/4 people's worth of spud. I add a tiny dollop of reduced beef stock (or a spoonful of bovril) to mine - just gives them a slight bit of colour and salty taste. But the goose fat gets very hot and fries off the fluffy bits of spud beautifully - they stay crispy until they're virtually cold. :beer1:

goose ..... mmm nice... once saw jamie oliver flavouring a gammon joint with marmalade also injecting pinaple juice into either pork or gammon to make the meat sweeter.

Drink - Mulled wine…..has to be to kick start the morning off.:daft:
Home made mince pies.

Breakfast -
Cheese muffins or chocolate French bread……

Dinner -
Cover Turkey with Smokey bacon and cook - use the bacon from the turkey chopped with hazelnuts over the Brussels……lovely.
Red cabbage with apple slices.
Parsnips with honey and butter.
Use goose fat for roasties……not just goose fat though…..’Lard’ as well……I can feel my arteries clogging up already…..!!
Game sausages - venison is best…….get these from a butcher….as they only do the best.
Home made cranberry sauce.
Gravy from de-glazing the turkey pan……good red wine …..not cheap stuff.
Champagne of course with dinner.

Pudding -
Home made Christmas pudding - with money in it…(just mention to people about it)
Light with a fine Brandy……I use Ashbach…..

If you have room left…….
Cheese - Stilton soaked in a good port.
Port to drink….

Fall out in front of the television……..:p

Wake up at 7pm to turkey sarnies…..:eek:

If your going to cook a ham do it 2 day’s before…..in Coca-cola….Nigella did this but it’s got to be ‘the real thing’…………coat in honey and marmalade before final cook in the oven………mmmmmm…outside bit’s are chef’s perk…..!!:D :D :D

Did the ham in cola a couple of years ago and it was very good.

Probably going to do the parsnips in maple syrup.

:eek: .....IMHO.....maple syrup is not the right texture....too runny....honey holds together better and has a better taste.........making the parsnips have a tacky but firm feel....not sloppy....:)

But yes do like to dabble in the kitchen........

I usually do Christmas dinner but as the MD invited the world and his wife over for dinner this year .......i'm taking a sit back, three women that will try and cook whilst under the influence of drink..*burnt turkey smilie here :rolleyes: *.....and i'm going to have a drink or 4.........:D

M&S do a good range..........or slip when you do you gig for the nurses....and the NHS will provide...........or if there's enough left over i'll send you a doggy bag.......:D

Yes...I go to my Mum & Dads on Christmas morning. My brother is there too, as he moved back after his divorce.

I always stay the night, so I can have a bevvy or 10!

Luckily my Mum's a fantastic cook, so the food will be seriously yummy!
