Wife's having her sisters round for a Girlie Night. I've spent hours slaving over a hot stove, Bruschetta for starters, Paella and Vegetable Kebabs as main course, and what thanks do I get? :confused:

"Bog off to the pub, out of our way !"
I don't need telling twice. :D :D A meal out, couple of pints to wash it down, and fill my barrel to bring home. Mmmmmmmmm nice. :D :D :D

I thought it was a kebab made from vegetable and paella and was wondering how you kept the rice on the skewer...:D

No probs mate. I now happy bunny. Two pints of Pintail Duck Bitter, the best Chicken Tikka Masala, Rice, and Naan bread I've had in ages, and my barrel filled with four more Duck to bring home. :approve:

Who says the drinking has to stop when the pub shuts. Surely by the time you get home, the house will be empty apart from your wife so that means more drinking.

OK. I'm good at Paella, as long as I don't allow it to burn. I really need a Paellador. ( For those who don't know, a large flat container to cook it in. The ones I've got are all too tall. ) The beauty of the dish is that you can chuck anything in it you want.

12oz Rice
6oz Chicken
6oz Coley, or other firm White Fish
4oz Prawns (cooked)
4oz of, or two Chorizo Sausages
4oz Peas
4oz Sweetcorn
one med onion ( chopped)
2 Garlic cloves, or Hefty dose of Garlic Salt,
pinch Saffron ( If you're Darren, Turmeric if you're not an affluent company director)
Pinch Cayenne Pepper
one or more Red Green Yellow or whatever colour Pepper takes your fancy.
Couple tomatoes chopped
Handful mushrooms.
Chicken stock 1 to 2 pints.
( Bacon, Rabbit, Squid are all other options)
Put oil in pan, fry onion, pepper ( chicken if not cooked) and spices for a while, add rice fry until it changes colour. Add stock ,Simmer for 20-25 mins, add everything else and cook for 10 minutes more till rice is cooked.

Add more stock if it dries out, add fish earlier on to allow it to cook fully.

Veg skewers:
Courgettes, Pineapple chunks, Apricot halves, Onions, Tomatoes, Mushrooms, Peppers cut into bite size chunks and grilled or barbecued. A marinade of Olive Oil, herbs, seasonings and Orange juice is an option I didn't do.

Bruschetta:
Chop six tomatoes, (seeds removed,) one onion, and one pepper. 2Tbs Olive Oil, hefty dose of Garlic Italian, or Italian seasoning. Mix well
Cut a Ciabatta loaf into slices ( or quarters ) toast one side. Cover other side with mixture, drizzle with olive oil, grill and serve.

Resisting the opportunity to do a racist Australian insult about Prawns, I was of the opinion that prawns were de rigeur in a Paella. I forgot to add Mussels to the options list, I know these are de rigeur, just my wife hates them, so they stay out of mine.

I had two recipes from the same source, one urged the policy you have suggested, the other was the one I have used/posted. Next time I will try the other one. Mind you, with the amount of Garlic already in the mixture, rubbing it on the bread would have resulted in you lot sitting at your monitors with pegs on your noses. :D :D

Serious time, yes Darren you're right, though I believe they're more for decoration, as are Mussels in the shell. I see where you're coming from, and totally accept your input.

Here's mine.


Paella

Serves 4-6

Ingredients


2 ½ oz paella rice per person
3 chicken breasts
1 packet thin chorizo sausage
1 cured chorizo sausage, cut into thick slices
Packet large raw tiger prawns
6 medium vine tomatoes, skinned and chopped
Pinch of mixed herbs
1 generous tbsp tomato puree
1 red pepper
1 yellow pepper
1 green pepper
1 large red onion, chopped
4 cloves garlic, finely chopped
1 portion frozen peas
Lemons for garnish
Chicken stock – twice the amount of stock to rice
Generous pinch of saffron, crushed and soaked in a little warm water
Portion of green beans, chopped
Olive oil
Balsamic vinegar
Dash of white wine
Paprika
Cayenne
Fresh parsley
Salt
Mussels

Method

Prepare all ingredients first

Skin tomatoes and add the tomato puree and herbs
Skin peppers by burning skins under grill and then slice. Add ½ tbsp olive oil and ½ balsamic vinegar and one clove of garlic, chopped.
Chop onions and garlic
Chop chorizo
Chop chicken breast into bite size pieces
Clean and de-vein prawns

Gently fry the onions in 2 tbsp olive oil until translucent, then add the chicken pieces and seal.
Add the thicker chorizo pieces until oils released, then add the thinner chorizo and fry gently for a minute or so.
Make a gap in the centre of the pan and add the rice, mixing until all the grains are coated with the oil.
Mix in garlic and simmer for a few minutes.
Pour in saffron, herbed tomatoes, teaspoon of paprika and slug of white wine. Add salt and gently mix together, pour in half of the stock, bring to the boil and then simmer for 8 minutes.
Shake the pan on occasion during cooking to stop the rice sticking to the bottom of the pan.
Scatter the mixed peppers over the top and continue simmering for a further 2 minutes. Add the remaining stock with the frozen peas and a little more salt if required.
Spread the prawns around the top, sprinkle with cayenne and continue to simmer for 10 minutes.
After cooking time, turn off the heat and cover the pan with a tea towel for approx 6 minutes.
Sprinkle with fresh parsley and serve with lemon.

Cook mussels as per packet requirements in a separate pan, discarding any that don’t open.

Stock
Twice the volume of rice (I.E. weigh rice for the amount of people to be served, place in measuring jug then double that measurement to give amount of stock required)

If I were to be absolutely truthful, my recipe started as a Delia, then went through my Father-in-law and then finally was adapted by me. ;)

I find that I have to concur wholeheartedly with that opinion. :D Mind you, my idol is Keith Floyd. ;) So much so that on occasion, I have omitted the actual boring cooking bit. :D :D :D :D

OK, since I'm on, a funny story about Paella, Snobbery, and Mistakes.

Although I'm getting on a bit, I've not travelled abroad a lot. ( And now that I've found out what they want to charge me for renewing my passport, I may not be travelling abroad again! :eek: ) The dearly beloved booked a Holiday to Spain, and though I'm not usually snobbish, I'm disgusted that Brits can go to Spain and want to drink Tetley Bitter, and eat Roast Beef and Yorkshire pud! :bang: ( Mind you, I don't drink Tetley's in this country, if I can avoid it! :D :D ) Therefore, I was determined that we would eat Paella at some point. Near our location was a beachfront ( Beachfront? It was actually on the beach! :D ) restaurant. We went in there, and had Paella, and I went back to base happy in the knowledge that we had dined on authentic Spanish food. You can imagine my discomfiture when on further travels, I spotted another identical establishment, and realised we had dined in what we may call " MacPaellas" :o :o :o :( :( :( Oh bother.

Fortunately, we later went into a small eaterie in Tarragona, where we had no idea how to order. That didn't seem to matter too much, since as soon as we sat down, the food arrived! :eek: :D One of the several courses was Paella, and what a revelation. It appeared to be cooked on the principle of
" What have we got in the kitchen? Let's chuck it in the Paella" :D :D :D You name it, there was some in there. Fantastic. :D :D :D The entire meal was great, particularly for the courses where we had to make choices. The patron often had to resort to pointing to what other diners had to show us the choices. :D :D :D
