I have a fortnightly residency on a friday so I'm covered for most of the year already.

I done a party above a newly refurbished pub locally to me just before christmas... This in turn got me christmas eve and new years eve above the same pub. Got a phone call just after NY asking if i'd like to do the odd friday night which has gone down so well that its every friday night now and they do the bookings in 3 month blocks, so friday nights are pretty good for me

In the area I live in is very heavy industry.
E.G. Nuclear Powerstation, Gas terminal, Nuclear Shipbuilding, Drug Manufacturers e.t.c.
All these companies have different shift patterns, so its not uncommon to have midweek parties as peoples working pattens change.
Typical example is Tesco. They are open 24hrs Fri, till 10pm Sat and 4pm Sun. So everyone who works there tends to have there parties on a sunday so all their workmates can go.
Back to the topic "every night" can be busy for me as the next night.

Fridays have gone a bit weird for me - I always used to be at my resident place on a Friday evening for at least 2 each month but now it's changed - more quiet so I get more work from a regular venue. As for Saturdays - I'm sorted for them and strangely my bookings are dropping in around the weekends when we get away in the motorhome. Result!
